Healthy Recipe: Blueberry Pudding

WellnessJuly is National Blueberry Month. This fruit has many health benefits, including helping fight cancer and aiding in weight loss. This month’s recipe puts a spin on pudding by incorporating blueberries, adding extra nutrients and a vibrant color.

Ingredients

1 cup coconut milk

1 cup kefir

3 avocados

1 cup blueberries

4 tbsp chia seeds

½ tsp sea salt

1 tbsp vanilla extract

1 drop peppermint oil

1 tbsp raw honey

Directions

  1. Blend all ingredients together in a high powered blender.
  2. Refrigerate for four hours.
  3. Serve chilled.
