November is dedicated to the sweet potato, a versatile, delicious superfood. These Vegetables are also knows as yams and are an inexpensive staple containing fiber, potassium and other vitamin benefits. We suggest you make fries out of them with no guilt!
- Sweet potatoes
- Olive oil
- Pinch of cayenne or cumin
- Cut thin sticks of sweet potato with skin on
- Toss sweet potatoes, olive oil, salt and pepper, cayenne or cumin and cinnamon together
- Scatter over a baking sheet and bake at 375 degrees until desired crispiness, usually 20-40 minutes turning halfway
